1). A mango drink is perfect for summers to beat the heat. 🤗 We are sure your kitchen is flooded with the King of fruits and you must be trying a think mango shake. How about giving a twist to your drink with Mango Basil Colada? 🥭

Guys check out what goes into making it. 


INGREDIENTS:

• 100 gm mango 1 teaspoon sugar 
• 5 leaves basil 
• 100 ml coconut water 
• 50 ml coconut cream 
• 6 ice cubes


DIRECTIONS:

• To make your very own Mango Basil Colada, mix basil leaves with sugar in a glass.

• Take a blender and blend ice cubes, chopped mangoes and coconut water in it.

• Now add this blended mix in the glass.

• Keep swirling this mix with a spoon and simultaneously add coconut cream in the glass.

• Garnish your drink with some basil leaves.

Your Mango Basil Colada is ready.

2). If you are visiting Maharashtra or Gujarat during summer, chilled Aam Shrikhand made from thick mango pulp & yogurt is a must try! It is typically served as a dessert after meal. #IncredibleIndia 



An ideal and perfect summer season mango dessert recipe to lower the body temperature from the scorching sun heat. Amrakhand recipe is the extended version of traditional and simple shrikhand recipe prepared simply by mixing the mango pulp to it. while it is popularly served as Indian dessert, but most enjoyed as a side dish to puri, chapathi and roti.

INGREDIENTS

  • 2 cups curd / yoghurt, thick and fresh
  • 1 cup mango pulp
  • ¼ cup powdered sugar
  • 2 tbsp saffron milk
  • ¼ tsp cardamom powder
  • 1 tbsp almonds, chopped
  • 1 tbsp pistachios, chopped
  • few fresh mango, pieces


INSTRUCTIONS


  1. Firstly take thick and creamy curd also known as hung curd or chakka.
  2. whisk smooth till it turns creamy with the help of whisk.
  3. Further, add 1 cup mango pulp, ¼ cup powdered sugar and ¼ tsp cardamom powder.
  4. Also, add saffron milk. to prepare saffron milk, soak few strands of saffron in 2 tbsp of warm milk.
  5. Mix well making sure the sugar gets dissolved in curd.
  6. Also, add in few chopped almonds and pistachios.
  7. Mix gently and transfer to the serving bowl.
  8. Finally, mango shrikhand / amrakhand is ready. store in refrigerator or serve immediately.


So this summer, get ready with some hung curd and mango puree and make delicious, chilled Amrakhand within minutes.

3). Easy Mango Pancakes. 

Filled with the goodness of mango pulp inside & the chunky juiciness of fresh mangoes on the outside, this mango stuffed pancakes would be adored by your kids. In fact, on days that you don’t feel like cooking up anything elaborate, they can be served in the brunch menu as well. So, the possibilities with the Mango Pancakes are endless! INGREDIENTS

  • 1 cup mango puree
  • 1 egg
  • 1 cup milk
  • 1 tsp mango essence
  • 1 tbsp butter
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp oil
  • For the mango sauce
  • 1/2 cup mango puree
  • 2 tbsp honey
  • 1 tbsp water

DIRECTIONS:


  1. Melt butter in the microwave for 30 seconds, and keep it aside.
  2. In a medium-sized bowl, add mango puree. Then add egg, milk, mango essence and butter.
  3. Whisk everything together until well combined.
  4. Pour flour and baking powder into the liquid mixture.
  5. Mix everything together with the help of a whisk. Make sure there are no lumps. But do not over mix the batter. It should be thick and creamy inconsistency.
  6. Heat a nonstick pan or tawa over medium heat. Lightly grease the pan with a brush. Pour a 1/4th cup of batter onto the pan and spread it out into a round shape.
  7. Cook each side for 5-6 minutes or until golden brown in colour. Repeat the same process for the rest of the batter.
  8. To make the mango sauce, take 1/2 cup mango puree. Add honey and water.
  9. Mix it with the help of a whisk.
  10. Serve the pancakes with mango sauce. Add chopped mangoes on top.

Make this mojito with or without the alcohol. Refreshing mint and lime and sweet Summery Mango make this a perfect drink for any outdoor event. 


This Mango Majoti is refreshing and great for quenching that thirst in the heat.

INGREDIENTS


  1. 12 mint leaves
  2. a good pinch of salt
  3. 1 tsp sugar
  4. juice of 1 lime
  5. 1 lime sliced
  6. 1 cup (255 ml) mango puree from fresh mango or can or use mango nectar or thick juice (I used Looza mango nectar).
  7. 1/2 to 1 cup (118 to 235 ml) chilled water or club soda
  8. 1 to 2 oz (30 to 60 ml) rum optional
  9. 1.5 cups (21 g) or more ice cubes



INSTRUCTIONS


  1. Distribute the mint leaves in 2 to 3 cocktail glasses.
  2. Add a 1/4 tsp sugar, a pinch of salt and a thin slice of lime to each. Muddle the mixture to bruise the mint leaves. (use a wooden flat-bottom muddler/stick or a pestle or back end of a spatula or use a spoon).
  3. Distribute the juice of a lime in the glasses. Fill the glasses with ice cubes.
  4. Add mango puree, rum and water. Add more sugar if desired.
  5. Garnish with mint leaves or lime slices and serve.

5). Homemade Mango Ice Cream

Mango Ice Cream makes for an easy dessert and can be quickly done whenever the craving arises. Made using fresh mangoes, this dessert is surely delicious. Here is a classic recipe with custard as the base and an eggless version too to make homemade Mango Ice Cream Recipe.



Mango Ice Cream come what may, is always going to remain on the top of my favourite desserts list. I love mangoes a lot.

Rightly known as King of all fruits, I wait throughout the year to buy this royal fruit.

We all yearn to eat tubs of ice cream during summer, don’t we? Hence, I thought why not add some Mango-ness in ice cream as well.

So, the recipe for this soft and creamy Mango Ice Cream was brainstormed almost instantly.

This homemade Mango Ice Cream can quickly be rustled up whenever the craving arises. Mangoes I had bought were sweet otherwise add a little sugar to the mixture.

You can also go ahead and use the canned mango puree because it’s so delicious as well.

Make sure to use the puree of either Kesar or Alphonso variety of mangoes. By using the puree you can make this ice cream in any season.

Go ahead and try this recipe for Summer, you are sure to love its flavour.

If by chance, you are a huge fan of mangoes like me then you may store some mango puree in the freezer and prepare this royal Mango Ice Cream even after Summer gets over and mangoes are unavailable.



Tips to make the best Mango ice cream.


  • Try to refrigerate the custard base or the eggless base until it is nicely chilled before adding it in the ice cream maker.
  • Freeze the pot of the ice cream maker for at least 48 hours.
  • After transferring the ice cream in a container, cover it with cling wrap and then put the lid tightly. It will reduce the formation of ice crystals.
  • You can add a tiny bit of yellow food colouring if you wish to for a more yellowish looking ice cream.
  • If making eggless ice cream, make sure to chill the cream and condensed milk nicely.
  • Adding a little bit of alcohol in your ice cream mix will make sure it doesn’t set too hard. But don’t go overboard with it otherwise your ice cream will never set.


INGREDIENTS

  1. 1 cup Full cream milk
  2. 2 cups Heavy cream
  3. 1/2 cup Light Corn Syrup
  4. 4 Egg yolk
  5. 1 cup Sugar
  6. 2 cups Mango puree
  7. 1 tsp Vanilla extract

DIRECTIONS:


  1. Mix milk, heavy cream and corn syrup in a pan.
  2. Heat it on low flame.
  3. Remove from heat once scalded (Boiled).
  4. Whisk egg yolks and sugar with a whisk till it is light and creamy.
  5. Pour milk and cream mixture that we heated in the egg yolk slowly and keep whisking while pouring.
  6. Heat this mixture on very low flame till the custard thickens.
  7. Keep stirring throughout.
  8. Do not overcook, otherwise, the eggs will curdle.
  9. Remove the pan from heat and cool the custard.
  10. Add the vanilla extract and mango puree and mix well.
  11. Refrigerate this mixture for 12-18 hours.
  12. Pour this mixture in the frozen bowl of ice cream maker and churn as per instruction.
  13. Transfer the churned ice cream in a chilled shallow container and freeze for another 2-3 hours.
  14. Scoop and serve.
